Shrimp with Proscuitto


OK - Quick post tonight. It was a busy day. Made a stop at the grocery to prepare for the weekend. A couple of weeks ago I purchased some procuitto to make a procuitto, goat cheese pizza, but I just couldn't deal with having my delicious flat bread within eating distance.
So tonight I decided to wrap some shrimp in the proscuitto, drizzle it with a little olive oil and bake it. I skewered the shrimp and procuitto, but I'm not sure that was necessary. I paired it with some turkey italian sausage. Low carb, remember!?! I really need to work on some fresh vegetables.
Notes: Proscuitto was pretty salty and dry. The wrapped shrimp were OK alone, but would be better with some kind of creamy sauce to balance the salt. Or maybe use low-sodium bacon next time. But not a bad option for a low carb dinner - and pretty easy to make. Plus, I really miss seafood and would love to make it as much as possible.
We don't have many plans for this weekend, so I'm going to try to do some creative low-carb cooking. Sunday I'll be making the Gimme More Meat recipe from my friends over at The Duo Dishes. I'm sure it will be delicious.
